Spicy Italian Sausage & Potato Soup

Winter is about to roll in and that means it’s time to introduce easy, warm and cozy meals! It is convenient to have homemade frozen meals that can be reheated or meals made in the Crock-Pot or Instant Pot. Especially, for those days when you need something cozy!

Try this Spicy Italian Sausage & Potato Soup!

Ingredients

? 1 medium onion chopped

? 1 pound spicy Italian sausage

? 1 bunch curly kale (chop and put in at the end)

? 4 cups chicken broth or bone broth

? 1 white potato

? 1 sweet potato

? 1 white onion

? Minced garlic to taste

? 1/2 cup half and half (dump in at the end)

Instructions

✔️ Brown the sausage and carmelize the onion then dump everything into one big pot! Let simmer until your potato is soft.

✔️ You can add red lentils for a fiber boost. If adding lentils, increase the amount of broth. For something lighter, use chicken sausage and use skim milk or plant-based milk. Note about plant-based milk: it will not freeze well and become chunky when thawed, but this doesn’t impact the taste.

✔️ This soup is easily frozen and transports well.
